Responsibilities

  • Set-up station properly and on time for each service period.
  • Make sure food quality and quantity is correct.
  • Prepare and assemble handrolls using the finest quality fish, vegetables, rice, and other ingredients.
  • Ensure the sushi rice is properly seasoned and prepared to the correct temperature.
  • Slice fish and other ingredients to the appropriate thickness and presentation standards.
  • Prepare and arrange garnishes, sauces, and accompaniments to complement the handrolls.
  • Ensure all sushi ingredients are fresh, stored properly, and handled safely in accordance with food safety regulations.
  • Maintain a high level of attention to detail with regards to presentation, ensuring that each hand roll is visually appealing and meets restaurant standards.
  • After service turn off clean preparation areas, such as equipment, work surfaces, and serving areas, to ensure safe and sanitary food-handling practices.
  • Ensure freshness of food and ingredients by checking for quality, keeping track of old and new items, and rotating stock.
  • Estimate expected food consumption, requisition or purchase supplies, or procure food from storage.
  • Consult with supervisory staff to plan menus, taking into consideration factors such as costs and special event needs.
  • Understands the impact of kitchen operation on the overall property financial goals and objectives.
  • Maintain a clean and organized work area, adhering to all health and safety guidelines.
  • Follow all company safety and security policies and procedures; report accidents, injuries, and unsafe working conditions to the manager.
  • Ensure uniform and personal appearance are clean and professional, maintain confidentiality of proprietary information.
  • Develop and maintain positive working relationships with others, support the team to reach common goals.
  • Perform other reasonable job duties as requested by the manager.

Qualifications

  • Hospitality oriented.
  • Minimum of 3 years of experience working in a sushi kitchen or similar environment. 
  • Proven experience in preparing sushi and sashimi, including fish slicing and rice preparation.
  • Strong knowledge of sushi ingredients, techniques, and presentation.
  • Excellent knife skills and the ability to work efficiently in a high-pressure environment.
  • Ability to maintain high standards of hygiene and food safety.
  • Ability to work well under pressure, with a strong focus on quality and efficiency.
  • Must be able to bend, squat and stretch, stand for 2-3 hours at a time, lift weighing up to 50 pounds.
  • Establishes and maintains open, collaborative relationships with employees and ensures employees do the same within the team.
  • Flexibility to work variable hours, including nights, weekends, and holidays
  • Fully Bilingual (Spanish/English)
